Highland Park
Located on the Orkney Islands, Highland Park is one of the northernmost distilleries in the world. Its uniqueness is defined by its 'Five Keystones' of production, most notably its use of aromatic peat from the local Hobbister Moor, which contains a high proportion of heather. This gives the whisky a distinctively floral, 'honeyed' smoke profile that is very different from the medicinal smoke of Islay. The distillery also still uses traditional floor maltings and matures its spirit in cool, maritime conditions, resulting in a highly balanced and 'all-rounder' single malt.
