Caol Ila
Caol Ila (pronounced 'Cull-Eela') is the largest distillery on Islay, hidden in a cove near Port Askaig. Its uniqueness lies in its role as a 'consistent giant'; despite its massive production, it maintains a very high quality, known for a 'light' Islay style. Its smoke is less 'medicinal' than Laphroaig and more 'oily and smoky,' with notes of green apples and sea spray. It is a critical component of Johnnie Walker blends but is equally prized as a single malt for its elegant, pale, and peaty sophistication.
