Boon
Brouwerij Boon is a standard-bearer for traditional Belgian Lambic and Geuze production in the town of Lembeek. Its uniqueness lies in its massive collection of 'foeders' (large oak barrels), which is the largest of its kind in the world. Frank Boon is credited with reviving the Lambic style in the 1970s; his beers are unique for their balance of tartness, oak, and 'funk,' created through spontaneous fermentation. The 'Oude Geuze' is a masterpiece of blending aged and young lambics to achieve a champagne-like effervescence.
